Lava Sweet Potato Brownie


Lava Sweet Potato Brownie 
This is so incredibly delicious, I came up with this recipe to make a dessert without oil and to my surprise it came out so lip smacking good that I had to post and share! It is perfect for the holidays or a lovely delectable treat. Top this baby with some coconut ice cream or nice cream (even better) and you will be in pure heaven. This is Plant Based. It is dairy free, egg free and oil free. As well as 1 large sweet potato I also use Einkorn Flour in this recipe as it does have gluten but does not have the negative effects of gluten and will not cause digestive upset. This recipe does not contain oil so you are getting the benefits of a whole foods plant based recipe without the guilt. 

Let’s dig right in and get down to the recipe 

This makes 20 brownies in a 8×12 pan cut into squares 4×5. Enough for 2 small pieces for 10 people. But if your like my family its enough for 5-6 people.

Preheat oven to 350
Bake at 350 degrees Fahrenheit for 30-35 min 
Prep time: 20-25 min
Start to finish done in less than one hour

Ingredients:
(wet ingredients)

1 large sweet potato(yam), peeled cut into squares boiled and drained (about 1 1/2 cups)
1 large banana
1/2 cup applesauce 
2 medjool dates
1/4 cup maple syrup
1 tablespoon vanilla 
3/4 cup almond milk
(dry ingredients
1 cup einkorn flour
2 tbsp flax meal
1/2 cup cocoa powder unsweetened 
1/4 cup coconut sugar
1/2 tsp baking soda 
1 tsp sea salt
3/4 cup vegan chocolate chips
*1/4 cup vegan chocolate chips to top


Add all wet ingredients together and blend in a high-speed blender (like a Vitamix). Mix all dry ingredients together. Mix both wet and dry ingredients together.  If it is too dry add a little more almond milk or water. 

Coat the 8×12 pan with coconut oil and pour in the batter. Now sprinkle with chocolate chips up to 1/4 cup (more or less depending on your sweet tooth) and plop it in the oven. 

Bake at 350 for 30-35 min
Cool 15 min slice and enjoy.

The middle will be Gooey like a lava cake. The longer it sits the firmer the brownie will be. If you want more lava gooeyness let it cool 10 min, slice and eat. If you’d like it firmer wait 30 min before eating (the inside will still be warm and moist).
